Campfire Sandwiches
 
You can prepare these at home and pack in Ziplock bags and refrigerate.  When ready to leave for your camping trip, just put in the cooler.
 
1 package small dinner rolls or 2 dozen kaiser rolls
1 1/2 pounds shaved deli ham
1/2 block Velveeta cheese, shredded
6-8 hard boiled eggs, diced
2-3 tblsp mayonnaise (enough to moisten ingredients).
 
Combine all ingredients and fill rolls.  Wrap each sandwich in foil individually and heat over campfire for about 15 minutes.
 
Enjoy!

Grilled Chocolate Sandwiches
 
sliced Bread

Hershey's Chocolate bar - (can be Milk chocolate or Dark)

margarine or butter

Bring out the camp pie iron. Use two slices of bread for each sandwich. Butter one side of each slice. The butter side will face out! Top the first slice with a chocolate bar broken in 1/2. Place the other side of bread on, butter side up! Place in pie iron and onto coals of Fire. Cook until bread is toasted.

For another treat you could add peanut butter or Marshmallows. Enjoy!

Dog in a blanket
 
Wrap a wiener in biscuit dough, skewer on a stick
and bake over hot coals. Or slit the wiener and insert a piece of
cheese before you wrap and cook it.

Whistle pigs
 
slice a winner down the center
add a slice of cheese
wrap with a slice of bacon
 
wrap in foil and cook till bacon is cooked compleatley 
 
serve on a bun with a dill pickel on the side

Camping Out Pigs in a Blanket

10 hot dogs
10 refrigerated buttermilk biscuits
Cheese (optional)

Wrap a biscuit around each hot dog, pinching the edges together. (Both ends of the hot dog will stick out.) Roast on a roasting fork or stick over hot coals (not flames) for 10 to 15 minutes, or until biscuit is baked and golden. Don't place the hot dog too close to the hot coals or the biscuit will be done on the outside before the inside.

Optional: Split hot dog and put cheese in it before wrapping the biscuit around it. Be careful the cheese doesn't run out before the biscuit is done. Makes 5 servings.

Camp Out Chili Dogs ..

  • 1 pound frankfurters
  • 1 large onion -- finely chopped or 3 tablespoons dried minced onion
  • 2 15-oz cans chili with beans
  • 1 teaspoon chili powder
  • 1/4 pound cheddar cheese, cubed or grated
  • frankfurter rolls

Combine all ingredients except cheese and rolls in Crock-Pot. Stir well. Cover and cook on Low for 5 to 10 hours or on High for 2 to 3 hours.

Add cheese just before serving and allow to melt slightly.

Serve each frankfurter in a roll and spoon sauce over top.

Serves 6 to 8

Campground Torpedo
Course : Sandwiches
Serves: 4
Ingredients:


Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
4 torpedo rolls -- (or shortie hoagie
-- rolls)
thousand island salad dressing
8 slices cooked salami
4 large slic swiss cheese
8 slices cooked ham
4 kosher dill spears


Preparation:
Cut rolls lengthwise but not all the way through. Spread Thousand
Island dressing on each side of cut side of roll (at least a generous
tablespoonful on each side). On each roll place in order: 2 slices
salami, 1 slice Swiss cheese and 2 slices ham. Put pickle spear down
center of fold. Fold over and wrap in heavy duty aluminum foil, using
drug store wrap. Put on grill 10-15 minutes, until hot, turn if
necessary. Done when you can hear the cheese and pickle juice sizzle.

Mountain Man Sandwich
1 large London Broil
1/2 cup butter
2 TBS Chives
Grill London broil till done as you like it.
When the meat is almost done, melt butter in pot.
Slice meat real thin and put on rolls or bread.
add a little butter and chives.
serves 6-8 adults.

Hot Dog Without a Campfire

Ingredients

  • 1 hot dog & roll
  • water
  • two paper towels
  • heavy duty aluminum foil
  • 1 qt size cardboard milk or juice carton
Wet paper towels and wring them out, put hot dog in roll and wrap the whole thing in the paper towels, covering even the ends. Wrap that in aluminum foil, be carefull not to wrap too tightly, you want air in there. Place this in the Milk carton... put it in a fire ring and light milk carton with a match. It's done when the milk carton is gone.

Hot Dog Surprise

10 x Hot dogs
American cheese (or boutique brand Wisconsin cheddar, if you have an expensive car), sliced into hot dog-length fingers
10 sl Bacon

Distance: 40 miles

At home or on the road, cut a deep slit in each wiener, and stuff with fingers of cheese. Then wrap on the diagonal, like an old bias-ply tire, with the bacon. Seal individually in foil. These are great for stuffing into those odd places on the engine where you can't fit a turkey or a suckling pig. Cook about 45 minutes, or until cheese is melted and bacon is somewhat crisp.

CAMPERS' TUNA SANDWICHES

2  7&1/2 ounce cans tuna, drained
1 can celery soup
2 tablespoons minced onion
2 teaspoons lemon juice
Dash of pepper
10 to 12 slices rye bread
Catsup

Mix tuna, soup, onion, and lemon juice and pepper together. Spread on the buttered side of five or six slices of rye bread. Spread remaining slices with catsup.

Bean & Egg Burritos
 

INGREDIENTS:

  • 1 can black beans
  • 1 cup salsa
  • 4 eggs
  • flour tortillas
  • shredded cheddar cheese

PREPARATION:

Rinse black beans with water, if desired. Empty into saucepan with salsa. Cover and bring to a boil. Once it's boiling, turn off the flame and let it sit while cooking the eggs. Break eggs into pan or bowl.

Add liquid, if desired. Fry up eggs to your liking. We add water, whisk them, and then fry them. When eggs are done, assemble your burrito with a layer of egg, a scoop of beans, and some shredded cheese. Then fold up tortillas, two edges at first, then one side and then the other, and roll. Feel free to add whatever you have on hand. This could also be a dinner recipe, if you add 1/2 cup water to the mixture and 1 cup instant rice. Just add the rice when the beans start to boil.

Note: If you tend to get gas from beans, make sure to rinse the beans thoroughly before cooking. This helps cut down on the enzymes that react in your stomach.

Variation: Egg Burritos. You can use crumbled bacon pieces, diced ham pieces, crumbled sausage pieces, or all of them, if you like. Cook the meat and sliced mushrooms in a frying pan. Add green onions, tomatoes, and a little butter just before adding the eggs. Wisk the eggs with a few drops of water (to make them light and fluffy), add grated cheese and keep stirring until you add it to the meat and vegetable mixture. Cook the meat, egg, and cheese until done. Put on a warmed tortilla and enjoy. You can add or take off any vegetable you like or dislike. Sometimes we use celery, if we have it.

Smoking Dogs

Ingredients:
Hot Dogs (bratwurst, hotlinks, polish sausage, other premium sausages)
Refrigerated pizza dough or crescent dough
Cooking Sticks
Condiments (catsup, mustard, relish etc.)

Directions:
Stick one "dog" on the end of your Cooking Stick and cook over an open fire pit of embers from briquettes or wood fire. When the "dog" is cooked, form 1-2 pieces of the dough around the "dog" and completely cover it (be careful, those "dogs" can be hot!). Return and complete by cooking the dough right onto the "dog" over the embers. Some like it burnt crisp, but I prefer mine a light golden tan. Remove the "Smoking Dog" from the stick (its still hot, be careful) and dip into your favorite condiment. I just like mine with some Dijon mustard. Repeat... Cooking Stick: I prefer branches from our apple tree which I pruned in the winter and save for the summer. When you're ready to use, just whittle off the bark on the end to get a clean wood surface (be careful with the knife). These sticks are great for marshmallows, too. Just clean the sticks off by holding them in the fire a bit. Clean up is easy on the last night of the campout, just throw the cooking stick into the last campfire! If you (or your neighbor) don't have an apple tree, then you might have to settle for long manufactured metal skewer.

"Pudgy pies" or "jelly squeeze" sandwiches

Note: made with a "pudgy pie" metal cooker

 Ingredients:

  • 2 pieces of bread
  • filling (this can be fruit pie filling, jelly, peanut butter, cheese, etc.)
  • butter

    Directions: Butter each piece of bread on one side. Place one piece of bread in one half of the cooker with the buttered side out. Place the filling in the middle of the bread and place the second piece of bread over the top, buttered side out. Now clamp the cooker together and lock it. You can pick off the excess bread and eat it or the fire will burn it off. Place the cooker in the hot coals and rotate when you think one side is done. Cooking usually takes about 15 minutes so you'll have to be patient. This is a delicious and special treat for camping!

    Grilled Quesadillas

    3 (8-inch) flour tortillas
    2 oz. (1/2 cup) shredded sharp Cheddar cheese
    2 slices bacon, crisply cooked, drained, crumbled
    3 Tbsp. thinly sliced green onions
    1 Tbsp. margarine or butter, melted

    Heat grill. On half of each tortilla, sprinkle 1/3 of cheese, bacon and green onions. fold other half over filling; press firmly with back of spatula.

    When ready to barbecue, brush one side of each folded tortilla with margarine; place filled tortillas, margarine side down, directly on gas grill over medium heat, on charcoal grill 4 to 6 inches from medium coals, or on campfire grill over medium heat. Cook 2 to 3 minutes or until crisp and brown. Brush top with melted margarine; turn. Cook 2 to 3 minutes or until crisp and brown. Cut each into 4 wedges. Serve with salsa, if desired.

    To judge a fire, cautiously hand, palm side down, at cooking height. Now, count number seconds can hold that position and you will have an indicator of how hot fire temperature is:

    5 seconds = low
    4 seconds = medium
    3 seconds = medium-high
    2 seconds = high
