'Stone Soup'


Ingredients

STONE SOUP
(all ingredients are optional, according to your taste)
 
Large Kettle (very important) it has to be large........
(the soup has a tendency to outgrow it's Kettle)
 
Ingredients.....
Large Beef Roast, (bone in) Or Stewing Meat (or both)
1 lg Head of Cabbage (cut in eighths with some core in each piece)
4 lg Onions (chopped) or quartered
1 bunch sliced Carrots (or larger pieces, I like 'em about an inch chunks)
1 lg can Tomatoes (or fresh cut tomatoes) (definately one of the optionals for me)
1 stalk  Celery (cut up)
1 Turnip (cut in cubes)
5 lbs Potatoes (peeled and cut in large chunks)
Salt and Pepper to taste,
(if you are using the tomatoe add a tsp of sugar to cut the sharpness of the tomatoe.)
 
(optional Bouquet Garni for Beef  below, wrapped in cheesecloth to lay in the juices for flavoring.
bayleaf
peppercorns
thyme
garlic cloves

Procedure

Cooking Directions ..........
Cube your meat, add it to the kettle, (along with the bone) cover with enough water to bring the level to at least one inch above the meat.
Add salt and pepper, and one onion - quartered
Tie a long string to your Garni bag, and lay on top, *optional
(tie the string to the kettle handle, if it has one) 
Boil for 30 minutes, stirring at will.
(You won't be stirring again throughout the rest of the cooking process, especially after you begin adding your other items, so make sure you satisfy that stirring urge now.)
..........STIRRING IS DONE.........
Now start adding the rest of your ingredients in layers (in this order)
beginning with half your carrots, and half your cabbage.
Bring back to a boil on medium heat, then set your burner to the 'simmer' mode.
Simmer for 15 minutes more.
then add the rest of the carrots, and then the rest of the cabbage,
bring to a boil on medium heat, and return to simmer mode.
( Now no need to wait for the boil again, just start adding things)
 Layer in the rest of the onions,
(add a little more salt and pepper) 
then add the tomatoe, (sprinkle with sugar)
then add the celery, then the turnips, then the potatoes.
Cover and let it simmer for 30 minutes 
........NO more STIRRING........ .....    
( you will start to see the boiling begin again, through the layers). 
simmer 30 minutes more, until you poke at the potatoes and they feel done. 
Remove the Garni bag. Now it's ready to set the Kettle on the table, and gather 'round.  Don't forget to bring your appetite.
