Self Saucing Pudding
2 cups self raising flour
1/4 cup sugar
100grms or 4oz of butter
1 egg
1 cup of milk
1 1/2cups of frozen blueberries
Sift Flour and sugar into a bowl, Rub in the butter until the mixture forms coarse crumbs. Blend the egg and milk together and pour into the dry ingredients. Mix together gently. Scatter the blueberries over the base of a well greased deep pie dish. Dot the batter on top
Sauce
jar of Blueberry Jam
1 Cup of boiling water
Mix together and pour carefully over the top of the batter
Bake at 350 degrees for 40-45mins until the pudding is golden and well risen. Stand for 5 minutes before serving.
Serve hot with Ice Cream or Whipped Cream
(Substitute frozen berries for any fruit of the season.)
