Whole Wheat Banana Nut Waffles | | | Ingredients: 1/2 Cup whole wheat flour
1/2 Cup all purpose flour
1 tsp. baking powder
1 Tbsp. melted butter or vegetable oil
1/2 Cup walnuts, minced | 1/4 tsp salt
3/4 Cup milk
1 banana
1 egg, separated

| Directions: PREHEAT waffle iron.
SIFT dry ingredients in a bowl.
ADD egg yolk, milk & butter to the dry ingredients & beat together thorougly.
MASH banana; mix banana & nuts into batter.
BEAT egg white until stiff, stir in 1/4 into batter to lighten it, then gently fold in the remaining white.
POUR scant 1/3 cup batter onto waffle iron. Cook Time: 45 minutes | Yield: 6 waffles | | |
