CORN FLAKE COOKIES


CORN FLAKE COOKIES 150g [4 1/4 0z ] butter, softened 2 cups caster sugar 2 eggs 1 teaspoon vanilla 2 tablespoons milk 3 cup plain flour 2 teaspoons baking powder 4-5 cups corn flakes. With an electric mixer, beat butter and sugar in a small bowl until creamy. Add eggs, one at a time, beating until combined after each addition. Transfer mixture to a large bowl. Stir in vanilla and milk, and then sifted flour and baking powder. Drop level tablespoons of mixture into corn flakes and toss and coat. Place balls about 5 cm [ 2 inch ] apart on oven trays lined with baking paper. Cook in a moderate oven 180 C for about 15 minutes, or until cookies are lightly browned. Cool cookies on oven trays for about 15 minutes before transferring to a wire rack to cool. Store in an airtight container when cookies are cold.
