"Sourdough Chocolate Cake". I had this recipe, years ago,............it is sooooooooooo good and moist. Using the sourdough, it has a "distinct" flavour, but very pleasant. Sure would be so happy, if someone could come up with this recipe. ps/McClug..........this is sure one heck of a site you have here. Glad I stuck my nose in! |

SOURDOUGH CHOCOLATE CAKE yield: 12 servings ingredients: 1/2-cup sourdough starter 1 1/2- cup all purpose flour 2-cups sugar 3/4 - cup powdered cocoa [ not instant] 2-teaspoons baking powder 2-teaspoons baking soda 1-cup milk 1/2-cup vegetable oil 3/4- cup cold coffee 1- teaspoon vanilla mixing: Put the starter in a large bowl,cover loosely and allow to stand at room temperature until active and bubbling-- at least 1 hour. then add the rest of the ingredients,in the order given, beating well after each addition, it is not necessary to sift or premix any of the ingredients as long as you are careful to get the baking powder and soda evenly mixed. grease and flour two [2] 9 inch round cake pans,pour in the batter,which will be thin,and bake in a preheated to 350*oven for about 30 minutes,or until the layers test done when poked with a toothpick. the cake will have pulled away from the sidesof the pan. allow to cool about 10 minutes before removing from pans, then finish cooling the layers on wire racks. do not frost until the cake is completely cold. a mild chocolate butter cream frosting is nice with this cake. |

CHOCOLATE BUTTER CREAM FROSTING Ingredients: 1/2-cup cocoa 1/3- cup boiling water 3-cups powdered sugar 2-egg yolks 1-teaspoon vanilla 1/2- cup butter,very soft DIRECTIONS: dissolve cocoa with hot water, beat sugar with cocoa mixture,add yolks and vanilla;beat until fluffy.place in bowl of ice water.add butter,in four[4] additions,beating until frosting is lighter in color and thick enough to spread. frost cake. refrigerate to set. |

oldrooster.........Thanks, but not the one I am looking for!, sorry. The one I want has eggs, unusual for a sourdough cake, I know, but it does. Yours has coffee too, and "mine" does not. I will print this out, tho, and keep on file........but if anyone else comes across "the other", please post for me. Thanks and bunches of hugs.......... |

Here's a recipe I found that contains eggs and has no coffee in it... Sourdough Chocolate Cake -
2/3 cup shortening -
1-2/3 cups white sugar -
3 eggs -
1-3/4 cups all-purpose flour -
2/3 cup unsweetened cocoa powder -
1 cup sourdough starter -
3/4 teaspoon baking soda -
1/2 teaspoon baking powder -
1 teaspoon salt -
3/4 cup cold water -
1 teaspoon vanilla extract -
Sift together flour, cocoa, soda, baking powder, and salt. -
Cream shortening, sugar, and eggs. Blend in sourdough starter. -
Add sifted ingredients slowly to creamed mixture, beating until smooth. -
Stir in water and vanilla, and mix well. -
Pour batter into greased and floured 9 x 13 inch pan. Bake at 350 degrees F (175 degrees C) for 35 minutes, or until done. Serves 18 -

Sodium-210mg From http://allrecipes.com Sourdough Starter (Donna German’s) Mix together in a GLASS or PLASTIC BOWL the above ingredients. Do not use metal utensils. Cover the bowl with a tight fitting lid and allow to sit in a warm, draft-free location for 4 to 7 days, gently stirring once a day. You may use your starter after 4 days. To use your starter, simply remove the amount called for in the recipe and add to the other ingredients. Replace the amount removed with equal amounts of water/milk and bread/unbleached all purpose flour. I always used bread flour. After feeding your starter, leave on counter for 24 hours. At the end of that period you may refrigerate your starter. You must re-feed at least once every 7 days, so I use my starter once a week. If you do not plan to use it, then take one cup out and throw away and feed. If you will be away on vacation you may freeze your starter, thaw it in the refrigerator upon your return.
