Breakfast

Egg on toast with orange juice & fruit

  • 1 egg.
  • 2 svgs of bread of choice.
  • 2 tsp of reduced fat margarine (40% fat).
  • 100ml of orange juice.
  • 1 serving of fruit.
  • 30g of mixed nuts and raisins.

Dinner

Fruity beef curry*

Lunch

Pitta pocket with hummus & salad

  • 1 pitta bread.
  • 150g of hummus.
  • 1 serving of mixed salad leaves.
  • 4 slices of cucumber.
  • 2 tomatoes
  • 1 medium-sized banana.

Snack

Bowl of wholegrain cereal with soy milk

  • 30g of wholegrain breakfast cereal.
  • 150ml of soy or rice milk.

Recipes:

Fruity beef curry*

Ingredients:

  • 1 tsp of vegetable oil.
  • ½ onion.
  • 120g of lean stewing steak.
  • 1 tsp of curry powder.
  • ½ apple.
  • 60g of sultanas.
  • 1 small tin of chopped tomatoes (200g).
  • 1 tbs of soy yoghurt.

Procedures:

1- Spray a non-stick pan with cooking spray and gently cook the onions until soft.

2- Add the beef, sprinkle with curry powder and continue to cook until the meat is browned all over.

3- Add all the other ingredients and simmer for around 40 minutes.

4- Stir in the yoghurt and serve with boiled rice.
