Orange, Chocolate and Ginger Cheesecakes

Another tasty recipe from Linda

Serves 4 �?2 points per serving (For Core = 1 point)

Ingredients

2 packets Weightwatchers Chocolate and Orange Cookie Bites

½ tsp finely grated orange zest

1 orange sugar free jelly

7 fl oz boiling water

4 oz low fat soft cheese

4 oz 0% Total Greek Yogurt

2 dessertspoons Splenda

2 teaspoons finely chopped stem ginger and a little syrup

1 orange, peeled and segmented (remove all white pith) or use canned mandarin oranges.

Method

Make up the jelly with the water and leave to cool.

Beat together the lfs cheese, yogurt and Splenda and stir in 2/3rds of the jelly until completely mixed.

Crush the Cookie Bites and divide between 4 ramekin dishes.  Place a little of the chopped ginger and syrup over the crushed biscuits.

Pour the mixture over the base, making sure it is sealed to the sides of the ramekins.  When the jelly is just setting stir in the grated orange zest and pour over the top of the ramekins.  Leave to set.   Decorate with the orange segments before serving.
