2 tsp margarine
6 slices l/c bread
2 oz (60g) sultanas or raisins
1/4 pint(450ml) skimmed milk
2 eggs
1 1/2 oz (45g) caster sugar
1 teasp vanilla essence
finely grated zest of 1 lemon
1. Grease a 2-pint baking dish with the margarine. Cut the bread into triangles and layer them in the dish with sultanas or raisins.
2. Beat together the milk, eggs, sugar and vanilla essence. Add the lemon zest and pour over the bread. Cover the dish and let soak for one hour.
3. Preheat oven to Gas Mark 4/180C/350F. Remove the covering from the pudding and bake for about 35-40 minutes until set.
Simple, delicious and nutritious - no wonder this is one of our favourite desserts!
