Use ripe plums for this recipe - Victoria plums work well.
Extra Easy serves 4 Prep Time 5 minutes Chill 1 hour
12 plums 7oz/198g raspberries
a large handful of fresh mint leaves
4 level tsp artificial sweetener.
1. Halve the plums, remove the stones and place in a large serving bowl along with fresh raspberries.
2. Place the frsh mint leaves on a chopping board, sprinkle over the sweetener and, using a sharp knife, finely chop. Scatter over the plums and raspberries and toss gently to combine.
3. Put in bowl in the fridge and chill for an hour to allow the flavours to infuse. Divide the fruit salad between four bowls and serve.

I think this would make a good starter as well as a dessert.
