- 6 level teaspoon syrup
- 50 g polyunsaturated margarine
- 50 g muscavado sugar, dark
- 1 large egg(s), beaten
- 1 teaspoon vanilla essence
- 50 g self raising flour, (white)
- 1 medium banana(s)
- 1 tablespoon skimmed milk
- 300 g low-fat ready to serve custard
Instructions - Preheat oven to 180°C / 350°F / Gas Mark 4.
- Grease 4 individual pudding basins or ramekin dishes with spray cooking oil. Spoon an equal amount of syrup into each one.
- Cream margarine and sugar together until fluffy and lighter in colour. Beat in egg. Add vanilla. Fold in flour using a metal spoon.
- Mash banana with a fork. Stir into mixture with the milk.
- Spoon mixture into prepared dishes. Stand them in a roasting pan. Pour in warm water to come halfway up their sides.
- Bake for 25 - 30 minutes until risen. Turn out and serve with hot custard.
Chef Tips - Apricot jam makes a delicious alternative to syrup.
