Serves 1 (double up for 2) about 300 calories 4 WW points
1 tsp olive oil
1/2 onion
60 g leek, sliced 1 clove garlic
90 g lean pork
1 apple (cooking apples give most flavour)
a tsp mustard
a sprig fresh rosemary
3 tbsp water
3 new potatoes
90 g green beans
Heat oven to 180 C. Cut the onion into wedges and slice the garlic and leeks. Heat oil in the casserole dish and fry onion, garlic and leeks gently for 5 mins. Add diced pork and fry until brown.
Peel, core and slice the apple, and add with rosemary and water to the pork and vegetables.l Cover and place in the oven for about 1 hour, or until cooked through.
Meanwhile gently steam or boil the potatoes and green beans to serve with the casserole
