- wafer-thin ham, 200g (7oz)
- red onion, 1, peeled and thinly sliced
- baby spinach leaves, 4 handfuls
- chopped tomatoes with peppers, 1 x 400g can
- eggs, 4
- cheese, 100g (4oz), grated
Preheat oven to highest setting and smear butter over four small ovenproof dishes. Fill the dishes with a combination of ham, red onion, baby spinach leaves and the chopped tomatoes with peppers. Crack an egg over the top of each dish, followed by the grated cheese, then season well with salt and freshly ground black pepper. Bake for approximately 10 mins. Serve with salad, if desired. |
