CARROT & CORIANDER SOUP
1 small onion, peeled and chopped
1 clove garlic, peeled and crushed
12oz carrots, peeled and sliced
1and a half pints chicken or vegetable stock
2 tbsp chopped fresh or frozen coriander
Put all ingredients into a saucepan, Bring to the boil, cover, reduce heat and simmer for 20 minutes.
Cool slightly, then liquidise
