Real tomato soup

 

Creamy tomato soup is the stuff of childhood, and it's easy to make yourself. Quick zero point Tomato soup



    


Ingredients

1 large onion, chopped
2 garlic cloves, finely chopped
2x tins of chopped tomatoes
1x jar of passata
1/2 teaspoon of cayenne pepper or more if you like it spicy!!!
fresh or dried basil


Instructions

Saute the onions and garlic in low fat cooking spray until soft and lightly browned.
Add the chopped tomatoes and passata.
Add the cayenne pepper according to taste.
Simmer gently for about 15 mins.
Add the basil to serve.


Special Notes

Ideal to pop in the fridge and re-heat when you get the munchies.
Can be blended if you prefer a smooth soup.
