This makes a large quantity, so I usually do half the recipe with a small celeriac:
1 large Celeriac
2 large carrots
2 onions
2 pints good veg stock
Black pepper
Peel and roughly chop/slice the vegetables, throw into a large saucepan, add the stock. Bring to boil and simmer until vegs are soft. Blitz in liquidizer or with hand blender until smooth or leave a little chunkier if that's how you like it. Season to taste.
If you like a bit more creaminess, add a couple of tblspns 0 pt greek yogurt.
