Cauliflower Cheese Soup
 
Serves 2
 
Syns per serving:
Green & Original: 1½ (add 6 syns if not using cheese as a Healthy Extra)
 
 
1 onion
Fry light
½ tsp paprika
1lb 4ozs/567g small cauliflower florets
1¼ pts/710mls stock made with chicken Bovril (I use Marmite or Vegemite)
¼ pt/142mls semi skimmed milk
12 Extra light Laughing Cow triangles (or 10 light ones)
salt & freshly ground black pepper
shredded spring onion to garnish
 
 
  1. Peel and finely chop the onion. Spray a large pan with Fry light and sauté the onion for 5 minutes over a medium - low heat until softened.
  2. Add the cauliflower and stock, bring to the boil, cover and simmer for 15 minutes. Add the milk and simmer for a further 5 minutes. Stir in the Laughing Cow triangles, transfer to a food processor and blend until almost smooth.
  3. Pour the soup back into the pan, season well and reheat. Serve garnished with a little paprika and some shredded spring onion.
