Creamy Mushroom Soup
 
1 lb mushrooms (approx)
3 largish onions (depending on your personal taste)
2 veg oxo cubes
garlic and coriander*
5 laughing cow light cheese(HEA)
 
 
Slice the onions .
Cook in a pan with fry light until they start to soften.
Roughly slice mushrooms and add to pan.
Cook for 5 mins.....approx
Sprinkle oxo cubes into pan and add boiling water.
Add garlic and coriander.
 
Simmer until all veg is cooked and soft.
Put into blender and whiz.
 
Take out the portion you wish to have and add Laughing cow light cheese..whiz again!!
 
Thats it ! Simple and delicious!
 
Colour looks a bit disgusting but once the cheese is added it takes on a paler colour....more like tinned mushroom soup!
 
 
Can also be used as a sauce for chicken or Quorn
 
*I ran out of coriander, so used tarragon instead - I preferred it.
