3 tbsp low calorie mayonnaise
1 tbsp tomato purée
a few drops Tabasco Sauce
1 tbsp gin sallt if wanted
300 g (10.5 oz) frozen prawns, defrosted anturally and well drained
1 little Gem or Cos lettuce, shredded
1 tbsp fresh parsley to garnish
1 lemon, cut into 4 wedges, to serve
1. Mix together the mayonnaise and tomato purée with a small whisk and stir in the Tabasco, gin and salt. Taste to check the seasoning.
2. Add the prawns to the mayonnaise and mix well.
3. Divide the lettuce between four glasses or small bowls.
4. When you are ready to serve, pile the prawns on the lettuce, sprinkle over the parsley and place a lemon wedge on each bowl.
