Serves 1
2 oz lentils
2 oz Butter beans (canned)
½pt vegetable stock (cube)
1 small onion
1 med carrot
4 oz runner beans
2 sticks celery
salt and pepper
½level tsp yeast extract
Wash lentils and put in pan with stock.
Bring to boil, reduce heat, cover and simmer gently 30 mins.
Add sliced onion, carrot and chopped celery.
Stir in yeast extract, cover and simmer a further 30 minutes.
Stir in butter beans, season to taste with salt and pepper and heat through.
Serve with boiled green beans.
I think as this is made with veggies it would count as a free food on any diet plan.
