These tasty pasties use filo pastry to keep the fat, calories and POINTS® values low.

Ingredients

  • 2 medium portion potato(es), peeled and cut into 1 cm (1/2 inch dice)
  • 1 small carrot(s), finely chopped
  • 5 spray low-fat cooking spray
  • 1 small onion(s), finely chopped
  • 50 g petits pois, frozen, thawed
  • 1 pinch salt
  • 1/8 teaspoon pepper, freshly ground black
  • 5 sheet filo pastry, thawed if frozen

Instructions

  • Cook the potatoes and carrot in lightly salted boiling water until tender - about 10 minutes. Drain well, then partially mash them with a fork.

  • Spray a non-stick frying pan with low fat cooking spray. Add the onion and cook until lightly browned. Mix with the peas, carrots and potatoes. Season with salt and pepper. Allow to cool.

  • Preheat the oven to 190°C / fan oven 170°C / Gas Mark 5. Mist two baking sheets with low fat cooking spray.

  • Cut the stack of filo pastry sheets into 8 equal squares. Share the potato mixture between the squares. Dampen the edges, then bring the opposite corners together to enclosing all the filling, pressing to seal. Place them on the baking sheets as you prepare them.

  • Lightly spray the pasties with low fat cooking spray, then bake for 20 - 25 minutes, until golden.

Notes

  • Use sweetcorn instead of peas, if you prefer.
