Pour 2 cups of REAL maple syrup into a deep sided pan
Use a LOW heat and place a candy thermometer in the syrup
Wait and wait some more till the temp is 233f. WOW is this stuff cool to watch boil!!!!
Remove from heat
When temp is down to 110f take a spoon or anything NOT metal (why I don't know but I will try metal wisk next and let you know) and beat it and stir it and keep going. This is the hard part. It takes longer then my hands could do it so I kept stwitching hands but always kept it moving.
Slowly it changes color and texture :)
When it is a light brown and getting thick pour it into any containor you want. We used foil pans. You can use any candy molds.
Let cool completely and either cut it in cubes or just eat away :) :) :)
