Success® White Rice

medium onions, sliced
2 tbsps
vegetable oil
1 can
(15 oz.) New Orleans-style red kidney beans, rinsed
1/4 cup
canned beef stock or water
1/2 tsp
salt
1/4 tsp
pepper
Directions
Prepare rice according to package directions. Slice onions with a knife on a cutting board. Set aside. Put frying pan on range burner and turn on heat to medium. Add oil and heat 1 minute, and then add onions. Cook lightly browned -- about 5 minutes. Next, add beans. Add beef stock or water to beans. Stir to blend. Cook until bean mixture is heated through -- about 5 minutes. Add cooked rice, salt and pepper and stir to blend with beans. Cook 5 minutes stirring occasionally, until heated through and flavors are blended. Serve.
