Frijoles Rancheros
4 bacon slices, chopped
1 medium onion, chopped
1 red bell pepper, chopped
1 (16-oz.) can refried beans
1 (16-oz.) can pinto or pink beans, drained
1/3 cup chopped chives
1/4 cup biscuit mix
1/2 tsp. Seasoned Pepper
1/4 tsp. garlic powder with parsley
1/4 tsp. hop pepper sauce
3 slices cheddar or jalapeño pepper cheese
In medium skillet, cook bacon, onion, and bell pepper over medium-high heat until bacon is browned and vegetables are tender, about 7 minutes. Stir in remaining ingredients except cheese. Pour into 1 1/2 quart baking dish. Top with cheese.
Bake in 375ºF. oven 20 min. or until cheese melts. Let stand 2 minutes before serving.
