Braised Beef with Cabbage Ingredients 2 tablespoons vegetable oil 1 1/2 pounds beef chuck, cut into 1 1/2-inch cubes 2 onions, thinly sliced 1 apple, peeled, cored, and thinly sliced two 16-ounce cans tomatoes, undrained 2 teaspoons sugar 2 teaspoons salt 1/8 teaspoon black pepper 4 medium potatoes, peeled, and quartered lengthwise a 1 1/2-pound head green cabbage, washed and cut into 8 wedges Procedure Heat the oil in a large skillet over medium-high heat. Add the beef and brown on all sides. Remove the beef to a plate.To the skillet add the onions, and cook over medium-low heat until golden brown. Add the browned beef. Stir in 1 cup water. Add the apple and the tomatoes, then sprinkle with the sugar, the salt, and the pepper. Bring the mixture to a boil, reduce the heat, and simmer, covered, for 2 hours. Add the potatoes and the cabbage to the meat mixture, and simmer, covered, for 20 minutes more, or until the vegetables are tender. Serving Information |
