Mediterranean Mini Pizzas
Ingredients:
  • 1 can (15 ounces) garbanzo beans, drained
  • 2 tablespoons fat-free milk
  • 2 tablespoons lemon juice
  • 5 cloves garlic
  • ½ cup roasted red peppers
  • 4 (8-inch) pita rounds
  • 1 teaspoon olive oil
  • 1 (5 ounce) package frozen chopped spinach, thawed and drained
  • 1 cup chopped tomatoes
  • 1 cup diced bell pepper
  • 1/3 cup crumbled feta cheese
  • 2 tablespoons sliced black olives
Directions: 1. Preheat oven to 450 degrees. 2. Place beans, milk, lemon juice, garlic and roasted red peppers in a blender or food processor and blend until smooth. Set aside. 3. Arrange pita bread rounds on baking sheet. Brush each pita round with olive oil. Bake for 6 minutes. 4. Spread each pita round with bean mixture leaving a ½ inch border. Arrange ingredients evenly over bean mixture and bake for 5 minutes or until thoroughly heated and crust is crisp.

Mediterranean food is so healthy for you. I think it must be all the olive oil and the lemon they use.

You are right.  I remember how skeptical I was walking into my first Mediterranean food restaurant. But you know what? It was delicious and not what I had expected at all. They had this grilled eggplant with a garlic sauce... yogurt & cucumber salad... it was a wonderful experience.
