  • Corn Relish Ingredients:
  • 1 Cup Fresh Corn
  • ½ Red Bell Pepper-diced
  • ½ Cup Green Bell pepper-diced
  • 1 Jalapeno Pepper-seeded and diced
  • ½ Red Onion-diced
  • 2 Tablespoons of Minced Garlic
  • 2 Tablespoons of Olive Oil
  • Additional Ingredients:
  • (4) 6 Ounce Salmon Filets
  • 8 Corn Husks (soaked in water for 30 minutes)
  • 2 Cups Masa (mixed according to Masa package directions)
Directions: Sauté all vegetables in olive oil until soft and tender, add salt and pepper to taste Layout wet corn husks and spread each with 2 ounces of Masa mix Layer corn relish on top of Masa mix Place salmon on top of corn relish, salt and pepper to taste Wrap husks around layered ingredients, tie, and roast at 350 degrees for 15 minutes Serve and enjoy!
