Large firm Portabella mushrooms rinsed well and dried
Cooking spray
Extra virgin olive oil
Garlic powder
Feta or Maytag Blue Cheese
Marinade:
1/4 cup good Oklahoma red wine
2 tablespoons butter, melted
1 teaspoon hot raspberry Thunder Sauce
Touch of honey
Dash of Greek seasoning
Fresh black pepper
Spray grill with cooking spray and set to low/medium heat. Coat mushrooms with olive oil and dust with garlic powder. Combine all marinade ingredients and brush mushrooms with marinade. Place mushrooms on grill and continue to brush with marinade while mushrooms are cooking, about 10 minutes depending on size.
Top with Feta or Maytag Blue Cheese.
