"More Recipes for the Holidays"
We have two recipes for you today. One of them is for
Weight Watchers and as I promised, the other is
for all of you who are on low carb diets.
First, Liz shared the Weight Watchers Spice
Cookies:
"1-1/4 cup pumpkin
1 box spice cake mix
Mix together, drop by the teaspoon onto a lightly
sprayed baking sheet. Bake at 350 degrees for 7-10
minutes. Cool.
I'm not sure about the nutritional value, but 5
cookies is 1 point in Weight Watchers. I like to
dip them into some fat free Cool Whip, which is 0
points."
"Bug Mom" shared this delicious "No-Salt, No-Sugar
Pumpkin Pie" recipe. It DOES NOT have a crust.
"Pumpkin pie
- 2 cups canned pumpkin
- 2 cups water
- 1 cup low-fat milk powder (equal to 4 cups
low-fat milk)
- 2 eggs
- Sugar substitute equal to 3/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1/4 teaspoon ground cloves
DIRECTIONS
Mix all ingredients.
Pour into a 9-inch glass pie pan sprayed with
non-stick spray.
Bake in a preheated 350F oven for 1 hour, or
until knife inserted into center of pie comes
out clean.
