 Creamy Garlic Dressing

Makes about 1 cup

Ingredients

½ cup buttermilk
¼ cup reduced-fat mayonnaise
1 ½ tablespoons lemon juice
2 tablespoons freshly grated Parmesan cheese
2 teaspoons reduced-sodium soy sauce
1 clove garlic, minced
�?teaspoon salt
Freshly ground pepper to taste

Combine buttermilk, mayonnaise, lemon juice, Parmesan, soy sauce, garlic, salt and pepper in a blender; blend until smooth.

Garlic-Rosemary Mushrooms

Makes 4 servings, about 3/4 cup each

Ingredients

1 ounce bacon (about 1½ slices), chopped
1 ½ pounds mixed mushrooms, such as cremini, shiitake (stemmed) and portobello, cut into ¼-inch slices
2 medium cloves garlic, finely chopped
1 ½ teaspoons chopped fresh rosemary or ½ teaspoon dried
¼ teaspoon salt
Freshly ground pepper to taste
¼ cup dry white wine

 Garlic-Rosemary Mushrooms Instructions

Cook bacon in a large skillet over medium heat until just beginning to brown, about 4 minutes. Add mushrooms, garlic, rosemary, salt and pepper and cook, stirring occasionally, until almost dry, 8 to 10 minutes. Pour in wine and cook until most of the liquid has evaporated, 30 seconds to 1 minute.

Garlic-Cheese Grits

Makes 6 servings, about 2/3 cup each

Ingredients

4 ½ cups water
1 cup grits, quick or old-fashioned (not instant)
¼ teaspoon salt
2 teaspoons extra-virgin olive oil
2 medium cloves garlic, minced
½ cup shredded extra-sharp Cheddar cheese
½ cup grated sharp Italian cheese, such as Pecorino Romano or Parmesan
�?¼ teaspoon cayenne pepper or 1 teaspoon hot sauce, such as Tabasco, or to taste

 Garlic-Cheese Grits Instructions

1. Preheat oven to 350°F. Coat an 8-inch-square baking dish with cooking spray.
2. Bring water, grits and salt to a boil in a large saucepan, stirring occasionally. Reduce the heat and simmer until the grits are thick, 5 to 30 minutes, depending on the type of grits.
3. Meanwhile, combine oil and garlic in a small skillet and cook over medium heat, stirring often, until the garlic is fragrant but not browned, about 1 minute. Remove from the heat.
4. Stir the oil and garlic into the grits along with the cheeses and cayenne (or hot sauce); transfer to the prepared baking dish.
5. Bake, uncovered, until bubbling and crusty on top, about 45 minutes.
