2. | Cook Bacon in a large heavy skillet over medium heat until crispy and remove from pan, add mushrooms to pan and sauté for a few minutes and then add baby spinach and cook until wilted. Remove from pan. Melt butter in skillet. Sauté shrimp for 1 minute on each side. Stir in garlic, and cook for 1 minute. Remove shrimp with a slotted spoon; set aside. Stir in flour and Cajun seasoning. Cook, stirring for 5 minutes. Gradually whisk in milk, then cook until thickened. Remove from heat, and season with salt and lemon juice. Return shrimp, bacon, mushrooms and spinach to sauce and spoon over cooked pasta. My one mistake was putting the pasta in with the shrimp, mushrooms and bacon at the end. It soaked up all the sauce and I would have like it a little saucier on the plate. But it was really good. The sauce is really different. More like a spicy cream gravy instead of a sauce. Logan I bet this would be good over grits instead of pasta. |
