we grill eggplant and zuchini.  it turns out really good.  how i do it is, slice the eggplant pretty thick, then brush the slices with olive oil, then sprinkle with kosher salt and grill a few mins on each side.  i also have a good egglplant casserole recipe that was my grandmothers, we make it every year at thanksgiving.
 
 

Eggplant Casserole

1 eggplant, peeled, cubed and boiled till soft
½ stick butter, chopped
1 �?16 oz can whole peeled tomatoes (chopped and undrained)
1 egg beaten (2 if big eggplant is used)
3 slices bread torn up
colby

Grease casserole & add eggplant, chopped butter, tomatoes and egg and stir up.  Fold in torn up bread.  Stick chunks of cheese down in casserole and on top.  Bake at 350 degrees for about 30 minutes.

Note:  in the past in a pinch i have substituted a can of rotel for the whole peeled tomatoes and then used velveeta stuck down in it and on top.  that is really good too!
