Faery Honeycakes
These cakes are similar to those made on the night before Beltane by women around the turn of the century. These cakes were left in the garden to please Faery visitors, and eaten on Beltane. These can also be eaten on Lammas, Litha, and Ostara.
They are also absolutely delicious.
Ingredients:
1cup sweet white wine
2 eggs
4 tablespoons sugar
1/4 teaspoon cinnamon
1 1/3 cup flour
1/4 teaspoon salt
Oil for frying (enough for 1 inch deep in skillet)
2 cups honey
1/4 teaspoon nutmeg
1. Beat the wine & egg in a medium bowl.
2. Combine the flour, cinnamon, salt & sugar in a small bowl.
3. Stir into the egg mixture. Let stand 30 minutes.
4. Combine the honey & nutmeg in a small bowl.
5. Heat 1 inch of the oil in a frying pan until hot,
but not smoking.
6. Drop the batter into the oil 1 tablespoon at a time; fry until golden brown turning if needed.
7. Drain on a rack or paper towels.
8. Dip into the honey and nutmeg mixture.
Yield: 3 Dozen. (which will NOT be enough!)
