Easy Cheesy Mashed Potato Casserole
 
1 1/2 cup water
2 Tbls butter
1/2 cup milk
1 1/2 cup instant mashed potatoes
1/2 tsp salt
1/2 cup sour cream
1 egg
1/2 cup shredded cheese, the kind you prefer
 
Preheat oven to 350.  Heat water, butter and milk in a saucepan.  Comine potatoes with milk mixture and salt.  Beat with an electric mixer.  Add sour cream and egg and mix well.  Place in lightly buttered pie plate and top with cheese.  Bake 25-35 minutes or until cheese is melted and potatoes heated through.
 
Serves 4-6 as a side dish.

Shoepeg Corn Casserole
 
1 can shoepeg corn, drained
1 can French style green beans, drained
1/2 cup sour cream
1/3 cup chopped onion
1/3 cup chopped bell pepper
1/3 cup chopped celery
1 can cream of celery soup
1/2 cup shredded cheese, your favorite kind
Ritz crackers
 
Combine ingredients in lightly greased 3 qt. casserole dish and top with crushed Ritz crackers.  Dot with butter and bake at 350 for 35 minutes. 
 
Serves 8.
