I'm no cook, but I do like eating. Came across this recipe whilst looking for something else as you do
Fritattas are to Italians what omelets are to the French and you can always substitute the broccoli for another green veg except maybe lettuce. How about celery?
What you will need :
8 Dried Tomatoes     1/2 cup of Chopped Parsley
125ml of Milk     3-4 Chopped Fresh Basil Leaves
10 eggs      1/2 a Cooked Chopped Broccoli
1 Tablespoon of Olive Oil   
200g of grated Emmental Cheese (or any cheese that takes your fancy and melts)
Salt and Pepper

carrot vegetables fresh coriander leaves cream, original fresh autumn winter soups, potages legumes, soupes

Method :

Soak the dried Tomatoes in boiling water for 10 mins, drain and chop

Beat the eggs with the parsley, chopped basil and milk. Add the tomatoes, broccoli and season.

Heat the oil in a large pan, add the egg mixture and gently cook until almost firm

Slide the mixture into an oven proof dish, sprinkle the cheese over the top and cook until gloden brown.

Serve hot, warm or even cold with a crisp green salad

It serves 8 so I should be able to make it last a couple of meals, heehee
