Ingredients
2 cups chopped plum tomatoes
1 small onion, chopped
3 garlic cloves, minced
3 Tbsp. fresh lime juice
2 tsp. minced canned chipotle chiles in adobo sauce
1/2 tsp salt
1/4 cup finely chopped green onions
1/4 cup chopped fresh cilantro
Directions
- Stir together all ingredients; cover and chill 1 hour.
Additional Information
Chicken-and-Monterey Jack Quesadillas: Substitute 2 cups (8 oz) shredded Monterey Jack cheese with peppers for Brie; proceed as directed.
