Toad In The Hole
Toad in the Hole is a homey little dish from England.  Originally it was made with any leftover bits of meats,
but today sausages are the usual "toads".  The batter in which they are hiding is the same as that used for
Yorkshire pudding.
1 lb pork sausage patties 1 cup all purpose flour
1 cup milk 2 eggs
1/2 tsp salt
Preheat oven to 400 degrees.  Cook sausage patties as directed on pkg; reserve drippings.  Brush oblong
baking dish, 11 x 7 x 1 inch. with sausage drinppings.  Place sausage patties in single layer in baking
dish.  Combine flour, milk, eggs & salt in blender jar.  Blend at high speed for 2 or 3 sec.  Turn off blender,
scarpe down the sides of the jar and blend again for 40 sec. (Or, in large bowlm, beat eggs & salt with an
electric blender until frothy.  Slowly add the flour, beating constantly.  Then pour in the milk in a thin stream
and beat till the mixture is smooth & creamy.)  Pour batter over sausages.  Bake uncovered until puffed &
golden brown, about 30 min.  Cut into square.
