Chocolate Zucchini Cake

This recipe calls for 1/2 cup sour milk, if you do not have any on hand, simply add 1 tsp lemon juice to the 1/2 cup milk, and let it stand for 5 - 10 minutes before adding to the recipe.

1/2 cup vegetable oil

1/2 cup soft margarine or butter

2 1/2 cups unsifted flour

4 Tablespoons cocoa

1 3/4 cups sugar

1/2 tsp. Baking powder

2 eggs

1 tsp baking soda

1 tsp vanilla

1/2 tsp cinnamon

1/2 cup sour milk

1/2 tsp cloves

1/2 cup chocolate chips

2 cups finely diced zucchini  ( I use a food processor to shred it)

Cream margarine, oil, and sugar. Add eggs, vanilla and sour milk. Beat with mixer.

Mix together all the dry ingredients and add to creamed mixture: beat well with mixer. Stir in diced zucchini. Spoon batter into greased and floured 9 x 12 x 2 pan. Sprinkle top with chocolate chips.

Bake 325 degrees for 40 - 45 minutes or until toothpick comes out clean and dry.
