Hi all!
 
I was wondering what you all cook on a weekly bases...I feel I am in a rut cooking the same thing over and over.
 
My husband eats anything except he is not a huge fan of chicken (except friend chicken legs) but I am a very picky eater. I don't eat cheese for one so that rules out most of the casseroles for me...besides that, and please don't make fun...I don't like my foods all mixed up touching like that. I told you I was picky! I love chicken though which I like, baked, broiled or friend...breaded, not breaded I don't care...I eat tons of chicken. BUT again my husband likes friend chicken legs but that is about it.
 
Anyways. for our dinners its baked pork chops (breaded in herb stuffing, delicious!), country friend steak, fried chicken, roast beef, steak...but it gets old. I also get him a frozen spaghetti and lazagna dish because I don't eat them so there is no since in cooking all that food, he doesn't mind it frozen anyways. Then I also cook, just for him, shephards pie probably once a month which he eats on for a few days.
 
But all of this is getting so boring and I don't feel that it is healthy enough or enough variety.
 
But again, I am an extremely picky person...veggies I will eat peas, potatoes and corn if that tells you anything. Its house I was raised...meat and potatoe type of gal. But the older I get the more my stomach and thighs are resisting this type of food!!! I don't want to weight 200 lbs one day and need to lose some weight. I am about 50 lbs over weight.
 
Sorry this is so long...didn't mean to ramble! So if you could share your dinners with me that would be great! I need some variety! LOL

Tricia, I used to be very picky about my food too. I wouldnt eat sauces, I wouldnt try anything new, fish (blech). As I get older I have been trying new things.....and am amazed that there is a whole world of really delicious things. I have issues of having kids that are picky. Now my rule is, you have to try it, if you throw up you dont have to eat it, if you dont, then there is nothing wrong with it! A great cookbook is Rachel Rays 30 minutes or less. She uses a wide variety of fresh stuff, and I have made about 6-7 recipes.......I havent tasted one I didnt like. Good Luck!

Thank you so much! My MIL actually gave me a that book a while back and I haven't even opened it! I have tons of cookbooks but have only found a few recipes that I liked...I will go home and get that out!

If you scroll down to the bottom of the page, click on "community" and it will take you to many, many forums, where you can ask questions, request recipes, get help with menu planning, etc. There's also a forum called Community Cafe, to talk about anything under the sun. It is sort of hidden though. You have to click on "other" in the talk forums, then scroll to the bottom to find it. And....there are thousands of recipes to try and then you can review them.
 
You'll be addicted to that site real soon, believe me! LOL!

Tricia, I've always been kind of a picky eater too. Probably because of how I was brought up. My dad was a meat and potato kind of guy and always had to have a separate bowl for his vegtable because they couldn't touch anything else on this plate.
And my mom's idea of Italien night was opening up a can of Franco American Spaghetti. I will say, I always liked Franco Amercian spaghetti, lol, in fact, I use the spaghetti o's to make a dish with cut up hot dogs.
I cut up my hot dogs, brown them, then add a few cans of Spaghetti O's and heat them up. I haven't had it in ages though because one son never would eat it.
 
Do you like pasta? I love to make linguine with olive oil and butter.
 
One of my sons is going to a cooking school right now so he's been very creative with our meals. We still eat meat and potatoes but he doctors everything up. I'm always telling him he puts everything but the kitchen sink into his meals.
A little of this, a little of that, and the food is usually pretty good. We've had a couple disasters, in fact, one was making "country fried steak." Do you have a recipe for it?
My son came up with his own but the steaks were soggy. I told him he used too much oil.
 
BTW, your pork chop dinner sounds good. My son says you have to grill pork chops so if he's cooking and we're having pork chops, they go on the grill.
I myself like to make them using Campbell's  cream of celery soup and then have mashed potatoes.
 
I have always enjoyed cooking but I hate trying to decide what to make for dinner cause there just doesn't seem like enough choices, especially if you have picky eaters. I can be picky but my son the cook is terrible. Although I will say, he's been trying more foods lately since he started cooking but he still won't eat some of my favorite things.

Thanks Sheryl! So glad to hear I am not the only picky one out there...my oldest brother was until he got married then he started eating anything! :)
 
I bet my husband would love that spaghetti and hot dog meal! LOL!
 
I hate pasta...the only noodles I will eat is in chicken noodle soup! I am a wierdo! My husband likes pasta though!
 
Wow that is great he is going to school! I would love to take a cooking class...its not that I can't cook though its that I am picky and there's just no need in cooking a large meal just for my husband...ya know? Maybe once we have kids...if we have kids I will start cooking more...because I don't want any of my kids turning out like me!
 
There are never enough choices...you can only do so much! Those pork chops are great...I will put the recipe on tonight when I get home (that is if I remember! Hehhe).

I have a couple simple chicken recipes for you.  I am also a picky eater and this one I thought I would give a try because it's simple and doesn't take a lot of time to make (I'm just too lazy after work). 
 
The first one is Ceasar Style Chicken.  Buy some caesar salad dressing and marinate the chicken in it 3-12 hours in advance.  After that place the chicken on a cookie sheet.  It then asks for you to sprinkle some parmesan cheese on it but I never have and it still tasted fine.  Bake it in the oven until done.  I think the temperature is 350 for about 20 minutes but I forget off hand.  This is very simple and as long as I remember to put chicken in the salad dressing before I go to work it's a piece of cake. 
 
The second is Chicken Marsala and this has been one of my favorites for a while now.  The ingredients are sliced mushrooms (I usually buy a package mushrooms already sliced), chicken breast tenders salt and pepper to taste (I think about 1 lb), 1 T of butter, 1/3 cup marsala wine, 1/4 cup heavy whipping cream, and some lemon juice (I forget the exact amount of this but I just randomly squirt some in).  First thing you do is melt the butter in a pan (at medium high).  Add the chicken (it says to add the mushrooms now as well but I usually wait until after I'm done with the chicken) and turn over every few minutes.  Add the marsala, whipping cream, and lemon juice over the chicken and mushrooms and let it simmer at medium, turning the chicken over every few minutes.  Then voila!!  I usually serve this with white rice and I love to sprinkle the sauce over it.  Mmmmm!!    I found this recipe in a cookbook for recipes that take 20 minutes or less so it is also pretty quick. 
 
I hope this helps!!  Let me know if I forgot any steps.  Sometimes I tend to do that.

Brinna, your chicken Marsala recipe sounds good. I make it without whipping cream and use more butter plus oil and sherry. Oh yeah and no lemon juice.
I think I'll have to try yours though, if my son will let me. Maybe he'll make it for us.

Tricia, I see you like potatoes and peas.  My mom used to make a stew using these two items and an onion, then she would crack an egg on top to poach them.
 
Take your potatoes and peel and cut them in cubes, rinse them well, place in a kettle and fill with water,  once they cook a bit throw in a can of peas, salt, pepper to taste, just before the potatoes are fully cooked put the eggs on top to poach.  I know this may sound grose, but it is delicious!
 
What about rice?  Do you like that?  I make rice pilaf.  And it's a good side dish with meat, poultry.  Take 1 stick of butter, melt it (but down burn it!), put in a half bag of think noodles and saute them until brown, take about 2 cups of rice (uncooked) , a huge can of chicken broth, and cook until the rice is tender, sometimes you may need to add more chicken broth.
 
If your husband isn't a chicken eater, he may like it if you try and fix it different ways, like pounding the chicken breasts until they are very thin, dip in flour, egg and fry, add any of the bottled sauces, I use a lemon one, and then again I serve this with a rice dish.

Making reservations or even getting take out is the way to go when in a cooking ruor just don't feel like cooking. We order out at least two times a week (mostly on Friday and Saturday).
