Does anyone have any tasty dessert recipes that don't require an electric mixer? I don't have one and I don't feel like digging one up. Any help is appreciated.

How about the old standard, pie. Apple requires no mix and a chocolate pie only requires a mixer if you are going to put whipped cream on it (we usually just put on cool whip). Now a lemon pie requires a mixer for the merange (sp) topping. That's all I can think of at the moment. You could always buy the dessert.

My mom makes these cookies type things called Macaroons.  They are chocolate with peices of coconut in them.  You just mix them in bowl with a spoon, and put them in the fridge, no bake required.  If you are interested in the recipe, let me know, and I can post it for you.

Blayne,  I'm not sure what you are looking for......I have tried several here.  I bumped up a few for you.  There are good ice cream pies in the pie thread that are really good.  The white chocolate cheesecake I found in a magazine a few years ago, it goes over very well.  Good Luck!!

Blayne, this is light, tastey and very simple. It's a light mint green in color too, so it's pretty. My 16 yr. old nephew can eat a whole bowl in one day!
 
Watergate Salad
 
1 16oz. can crushed pineapple
1 3oz. pkg. instant pistachio pudding
1 cup miniature marshmallows
1 4-1/2 oz. container of Cool Whip
1/2 cup chopped pecans (optional)
 
Stir dry pudding and pineapple together till thickened. Stir in remaining ingredients and chill. Serves 8. Doubles nicely for 16.

I got this recipie on the Kraft Food site and it is delicious, requires no mixer
 
Lime Chiffon Pie
2/3 cup boiling water
1 package 4 serving size of Lime Flavored Sugar Free jellos
Ice cubes
1/2 cup cold water
1 1/2 tsp grated lime peel
2 tbls lime juice
2 cups thawed cool whip, sugar free  or regular whipped topping
1 ready to use reduced fat graham cracker crumb crust
 
stir boiling water into dry geletain mix in large bowl at least 2 minutes until completely disolved.  Add enough ice to cold water tomeasure 1 cup
Add to gelatin, stir until ice is completed melted.  Stir in lime peel and jice
Add whipped topping stir with a wire whisk until well blended
Refridgerate 15 to 20 minutes or until mixture is very thick and will mound, spoon into crust
Refridgerate at least 4 hours or overnight.  Store leftover in fridge
