 was "talking" to Patty and told her I had made my mother's favorite Pineapple Square recipie to bring to a dinner party I was invited to, so she asked for the recipie,  here it goes!
 
Filling:  2 cans of crushed pineapple (I used 4 cans) so I doubled this part
 
4 cans crushed pineapple, 6 tbls of cornstarch 7 tbls sugar, cookover medium heat until clear and thick, let cool.
 
Hint:  mix the cornstarch with a bit of the juice and pour in the pan.  You have to really keep stiring this so it doesn't burn on the bottom.
 
Pastry:  4 cups flour, 1 cup sugar, 4 tsp baking powder, 1/2 cup of milk, 1 tsp salt, 3/4 cup butter flavored shortening, 2 eggs, 1 tsp vanilla
 
Beat sugar and shortening until smooth, add egg one at a time, beat thoroughly, add vanilla, beat in flour, baking powder and salt, alternating with milk until a soft dough is formed, cut in two equal parts, set aside.
 
On a floured board roll dough out and place in jelly roll pan (good luck folks, mine kept falling apart, so I ended up patting the dough in)
 
Fill with cooled pineapple filling
 
Roll out remainder of dough and place on top, bake at 350 for 25 to 30 minutes
 
Hint:  I usually bake this for about 20 minutes on the bottom rack then place it on top for the remainder of the baking process.
 
Frosting: 
Make a butter frosting using approximately 2 cups of confectionary sugar, 4 tablespoons melted butter and enough milk to make a thick consistency.  Spread on baked pineapple squares after they've cooled off.
 
I sprinkle ground up walnuts or pecans on top before frosting sets.
