Recipes : Bean Salad with Tuna

1 lb. dried beans, any kind. I use cannellini ones, or an array of others.
1/2 cup fresh sage leaves
1/2 cup extra virgin olive oil
7 oz. canned tuna, preferably in oil
juice of 1 lemmon
freshly ground pepper, regular is fine too
1/2 onion, thinly sliced
salt
-------------------------------------------------------------------------------------Soak the beans in water to cover overnight. (Any kind of beans you like: Garbanzo, Red beans, Black ones...I love them all. ) Drain, cover with fresh cold water and bring to simmer with sage and a tablespoon of oil. Simmer until tender, about 1 1/2 hours. Drain off any water that remains and disgard the sage. Let the beans cool.
Lightly break up the tuna with a fork, or hands (as I sometimes do---cleans hands..I promise..I washed them)
Toss with the lemon juice and plenty of pepper.
Place the beans in a salad bowl and pour the remaining oil over them. Add onion and toss. Season with salt and pepper..I add even more pepper here because I love it. Do it to your taste.
Scatter the tuna on top and serve.
I like to put some leaves of lettuce on my dish, and put the mixture on top of it.
 
Serves 6-8..Or, for one person (3, or four meals)
