Pumkin Rolls
 
1/3 cup canned pumkin
3 eggs
1 cup sugar
3/4 cup flour
1 tsp. baking soda
2 tsp. cinnamon
 
Filling Ingredients
 
8 oz. cream cheese
1 cup 10x powdered sugar
4 tblsp. butter
1/2 tsp. vanilla
 
Rolls:
Beat 3 eggs and add remaining ingredients. Beat until well mixed. Spray a cookie sheet with Pam or Bakers Joy. Spread mixture on cookie sheet. Bake at 375 for 15-20 minutes. Sprinkle generous amount of 10x sugar onto paper towels the length of the cookie sheet. Turn the cookie sheet upside down on top of the sugar and let cake fall out onto it. Roll towel and mixture in jelly roll fashion. Let it sit for 30 minutes. Then unroll and spread the filling onto the cake and roll it (without the paper towels this time). Wrap the roll in wax paper or saran wrap and chill. Cut into pinwheel shapes after it is well chilled.
 
My mom always makes these at Thanksgiving and Christmas. They are delicious!

Basic Bread Recipe
 
2 tblsp dried yeast
2 tblsp sugar or honey
625ml lukewarm water
4 cups all purpose flour
2 tblsp salt
extra flour for dusting
 
Dissolve the yeast and sugar or honey in half of the water.
In a large bowl combine the flour and salt and make a well in the middle. Add the yeast mixture and bring in the flour until all the yeast mixture is soaked up.
Add the rest of the water, combining it all together until you have a nice moist dough.
Knead for aroung forty minutes, roll into a roundish shape, and score deeply. Place on a well floured baking tray and cover with a slightly damp dish cloth.
Prove for 40 mins or until doubled in size.
Knead again just to knock the air out of it, knock into desired shape and prove again. Proving a second time gives an amazing texture to the bread!
Bake in oven preheated to 200f/400c and bake for twenty minutes, or until the bread sounds hollow when tapped on the bottom.

Chocolate Twister Bread
 
1x Basic Bread Recipe
200g soft butter or marg
200g crushed hazlenuts
300g grated semi sweet chocolate.
 
After proving the basic bread recipe for the second time, divide the dough into 2 equal parts.
Take each piece and push into a squarish shape on a floured board or counter top.
Roll each piece into a rectangle shape about a quarter inch thick.
Spread with butter, and sprinkle with the chocolate and hazlenuts.
Roll up like a swiss roll, slice into 1" wide slices.
Place on a greased baking tray, cut side up and bake in oven preheated to 200f/400c for 20 mins.

Bronco Bread
If you like the Denver Broncos, serve this bread during one of their games. This freezes well. I got this from my Colorado Cache Cookbook.
 
2 tablespoons softened butter
1/4 cup hot water
1/2 cup orange juice
1 1/2 tablespoons freshly grated orange rind (1Tblsp. plus 1 tsp.)
1 egg
1 cup sugar
2 cups flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup fresh blueberries, or frozen or canned, well drained and dry them off a bit by wrapping in paper towels.
 
  1. Combine butter, water, orange juice and rind in a bowl.
  2. Add egg and mix well.
  3. Add dry ingredients and fold in blueberries by hand.
  4. Bake at 325 degrees in greased 9x5 inch baking pan for 1 hour and 10 minutes.
  5. Cool on rack.
