Patty's Potatoe Salad
New Red Potatoes (for however much you plan to make)
2 small jars pimiento (diced)
3 to 4 large green onions, chopped
3 celery stalks, chopped
3 to 4 hard boiled eggs, chilled and chopped
1 pound of bacon, fried and crumbled
Lemon pepper to taste
 
Cook potatoes with skins on; peel and dice. Mix all ingredients together with mayonaise (I use Hellmans or Best). Chill.
 
Note: The bacon and the green onions and pimiento are what make this so good. It's even good right away with the bacon still warm, but I prefer it chilled.

Spaghetti Salad
1 pound spaghetti
1 large green pepper (chopped)
1 large onion (white, chopped)
5 stalks celery (chopped)
1 jar of McCormicks salad supreme (in the spice aisle at grocery store)
2 pkgs. Italian dressing mix
Dash of garlic powder
Dash of oregano
 
Break spaghetti in half or quarters, however long you want them. Cook as directed. Prepare Italian dressing mix as directed on package. Mix all ingredients together and chill.
 
I had this at a friends cook-out and thought it was a good recipe.

Plain Ol' Potato Salad
 
Potatoes peeled sliced boiled drained and cooled
(I use about 1 regular potato per 2 servings)
4 large eggs boiled peeled and sliced
In large bowl prepare and mix well
1-2 c. Mayo
1-2 tsp. Mustard
1-2 tsp each: season salt, garlic, onion and celery powder (or salt), pepper and paprika
add: chopped celery sliced olives chopped pickles and minced onions. (cubed cheese is optional)
add potatoes and sliced eggs  and lightly sprinkle paprika over the top for looks.
Chill and serve

Pizza Pasta Salad
 
1 package sprial noodles boiled and chilled (I like the variety pack with the spinich noodles for extra color)
your favorite pre-cooked pizza toppings
these are my favorites:
Pepperoni sliced into quarters
cubed cheese
olives
chopped green and red peppers
cooked ground sausage
sliced ham
chopped mushrooms
chopped tomatoes
1 package (prepared) Italian Vinagrette dressing (its better then the pre-prepared store bought kind)
 
In large 3 quart bowl toss all ingredients except dressing.  When well mixed slowly add dressing stirring while adding, when all dressing is added toss some more.  Chill for 1 hour and toss once more before serving.

Ranch and Bacon Pasta
 
1 packet ranch dressing mix
1 cup mayo
1 cup baco-bits
1-2 Tbsp milk
Mix in 3 quart bowl and set aside
 
Boil together shell macaroni frozen pees carrot and corn mix drain and run under cold water until pasta is cooled.  Add to Ranch mixture and toss well. Chill and serve

Ingredients

Cucumber Salad
3 medium size cucumbers
1-1/2 tblsp. sliced green onion
3 tblsp. white vinegar
1-1/2 tsp. sugar
1/2 tsp. salt
1/4 tsp. pepper

Procedure

Pare and thinly slice cucumbers; place in a serving dish. Add green onion, vinegar, sugar, salt and pepper; toss gently to coat. Cover with plastic wrap. Place in freezer section of refrigerator for a few minutes, just until chilled. Serves 6.

Patty I got that spaghetti salad recipe from my mom!! I love it! I make it everytime I have to go to a BBQ or cookout. It's so light and delicious.
I would also suggest throwing in a few chopped and seeded tomatos!

Yes, I love it too. I can eat a bowl of that for lunch and be totally happy! I'll definitely add some of my garden tomatoes, when they ripen this year. That sounds great!
 
I've also had a hankering for a really good Margarita. That is not something you find easily in Pennsylvania. UGH! So, I think I'll bump the beverage thread too, so I have my recipe for it handy for Superbowl Sunday...lol!

Hawaiian Coleslaw
 
This is wonderful served with crispy fried chicken or baked ham! Prep time is approximate. Cook time is how long I chilled mine.
 
4 cups fresh shredded green cabbage
1 (11 ounce) can Mandarin orange sections, reserving the juice
1 cup crushed pineapple, drained
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon nutmeg
1 tablespoon orange juice (from the canned oranges)
1/4 teaspoon white pepper
1/2 cup mayonnaise
 
  1. Shred cabbage into large bowl.
  2. Drain orange sections, but reserve the juice.
  3. Drain and measure the pineapple.
  4. Add salt and spices to shredded cabbage.
  5. Add the orange juice from the oranges and add the ground white pepper.
  6. Toss lightly.
  7. Add the drained fruit, tossing all with a fork.
  8. Stir in the mayonnaise.
  9. Chill well before serving.

Here's a really easy Tortellini Salad I made up:
 
Chop some broccoli, califlour, red bell pepper and cucumber (you can add anything to suit your taste such as black olives or tomato too)
 
Boil some frozen cheese tortellini, rinse and drain and cool
 
Add ingredients in a large bowl and mix in some ranch dressing.  I also add a Tbsp or 2 of Zesty Italian dressing to give it a little zip.
