Applebee's® Baby Back Ribs

Prep. Time : 1:15
Serves : 3

(3) 1 Lb. racks pork baby back ribs - cut in half
1 cup ketchup
1/4 cup apple cider vinegar
3 Tbls. dark brown sugar
3 Tbls. Worcestershire sauce
1 tsp. liquid smoke
1/2 tsp. salt

-Place ribs in a large pot and fill pot with enough water to cover ribs.
-Bring water to a boil, reduce heat, cover and simmer for 1 hour, or until ribs are fork tender.
-While ribs are boiling, combine remaining ingredients in a medium sauce pan and bring to a boil.
-Reduce heat and simmer, uncovered, stirring often, for 30 minutes, or until slightly thickened.
-Place boiled ribs, meat side down, on a broiler pan.
-Brush with half the sauce mixture and broil 4"-5" from heat for 6-7 minutes.
-Turn ribs over, brush with remaining sauce, and broil additional 6-7 minutes, or until edges are slightly charred.

Chi-Chi's® Baked Chicken Chimichangas

Prep. Time : 0:45

1/2 cup chopped onion
1 Tbls. minced garlic
2 Tbls. olive oil
1/2 Tbls. chili powder
16 oz. salsa
1/2 tsp. ground cumin
1/2 tsp. ground cinnamon
1 pinch salt
2 1/2 cups cooked chicken - shredded
8 lrg. flour tortillas
1 cup refried beans
1 cup shredded cheddar or Monterey Jack cheese - optional
olive oil - for brushing

-In large saucepan, saute onion and garlic in oil until tender.
-Stir in chili powder, salsa, cumin, cinnamon, and salt.
-Stir in shredded chicken.
-Let cool.
-Grease rimmed cookie sheet.
-Working with one tortilla at a time, spoon a heaping tablespoon of beans down center of each tortilla. Top with 1/4 - 1/2 cup of the chicken mixture. Sprinkle with cheese, if desired.
-Fold up the bottom, top and sides of tortilla.
-Secure with wooden toothpicks if necessary.
-Place chimichangas in greased baking pan, seam side down.
-Brush all sides with the oil.
-Bake in 450 degree oven for 20 to 25 minutes, or until golden brown and crisp, turning every 5 minutes.

NOTES : Serve with sour cream and quacamole.

1 cup sifted flour
1/2 tsp. baking powder
1/8 tsp. baking soda
1/8 tsp. salt
1/2 cup chopped walnuts
1/3 cup butter or margarine
1 cup packed brown sugar
1 egg - beaten
1 tbsp. vanilla extract
1/2 cup white chocolate chips
3/8 cup maple syrup
1/4 cup butter
3/8 cup brown sugar
8 oz. cream cheese - softened
1/2 tsp. maple extract or flavoring

-Sift together sifted flour, baking powder, baking soda, and salt.
-Add chopped nuts. Mix well and set aside.
-Melt butter.
-Add brown sugar and mix well.
-Add egg and vanilla and blend well.
-Add flour mixture, a little at a time, mixing well.
-Stir in white chocolate chips.
-Spread into a 9" X 9" X 2" pan.
-Bake in 350 degree oven for 20-25 minutes, or until toothpick inserted in center comes out clean or with slightly fudgy looking crumbs.
-Combine syrup and butter, cook over low heat until butter is melted.
-Stir in brown sugar until dissolved.
-Remove from heat and beat in cream cheese and maple extract until smooth.
-Heat again either over low heat or in the microwave at short intervals to reach desired sauce consistency.

NOTES : Serve sauce over warm blondies topped with vanilla ice cream.

Red Lobster's® Cheddar Bay Biscuits

2 cups Bisquick® baking mix - lowfat okay
2/3 cup milk - lowfat okay
1/2 cup shredded cheddar cheese - lowfat okay
1/4 cup butter or margarine - melted
1/4 tsp. garlic powder

-Combine Bisquick®, milk, and cheddar and beat with a wooden spoon for about 30 seconds.
-Spoon on to greased cookie sheet. Smooth tops down with spoon.
-Bake in 450 degree oven for 8 to 10 minutes.
-Combine butter and garlic powder and pour over hot biscuits.

NOTES : Red Lobster® uses white cheddar, but his tastes just as good.

Boston Market's® Creamed Spinach

3 Tbls. butter OR margarine
4 Tbls. flour
1/4 tsp. salt
1 cup whole milk
1/2 cup sour cream - lowfat okay
1 tsp. salt
2 Tbls. butter or margarine
2 Tbls. minced onion
1/4 cup water
20 oz. frozen spinach - chopped

-Over medium low heat, melt butter in a saucepan.
-Stir in flour and salt until creamed together.
-Stir in milk a little at a time.
-Increase to medium heat.
-Constantly stir with a whisk until mixture becomes thick and smooth.
-Remove from heat and set aside.
-Place butter in a 2-quart saucepan over medium heat, add onions, and cook until the onions are transparent.
-Add spinach and water to pan, lower the heat and cover.
-Stir several times until the spinach is almost completely cooked.
-When spinach is almost done, add white sauce and sour cream
-Stir well and simmer until completely blended.

1/2 cup butter
1 cup Coca-Cola
®
1 oz. square semi-sweet baking chocolate
3/4 cup miniature marshmallows
2 1/3 cups all purpose flour
3/4 cup cocoa powder
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 cup granulated sugar
1/2 cup shortening
1/2 cup vegetable oil
2 tsp. vanilla
2 eggs
3/4 cup buttermilk
1/2 cup butter
1/2 cup cocoa powder
1/4 cup Coca-Cola
®
1/4 cup chocolate syrup
1 tsp. vanilla
3 cups powdered sugar

-In a saucepan, bring butter, Coke®, and chocolate to a boil.
-Remove from heat and stir in marshmallows until dissolved.
-Set aside and allow to cool to room temperature.
-In a bowl, combine flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
-With an electric mixer, beat together sugar, shortening, oil, and vanilla until fluffy.
-Add eggs and buttermilk and beat until smooth.
-Add 1/2 of the dry mixture into the wet mixture and beat until smooth, scraping the sides of the bowl often.
-Add cooled Coke
® mixture and beat.
-Add remaining dry mixture and beat for 4 minutes. Batter will be thick.
-Pour batter into a greased and floured 13" X 9" X 2" baking pan.
-Bake on top rack of a 350 degree oven for 35-40 minutes, or until toothpick inserted in center comes out clean.
-Cream butter with an electric mixer.
-Add cocoa powder, Coke
®, chocolate syrup, and vanilla and beat until smooth.
-Slowly add powdered sugar, scraping the sides of the bowl often, while beating with the mixer.
-If frosting seems dry, add small amounts of Coke
® until you reach desired consistency.
-Frost cake while warm.

NOTES : Serve topped with natural vanilla bean ice cream.

Chili's® Fajitas

Serves: 4

1/4 cup lime juice
2 Tbls. olive oil
4 cloves garlic - crushed
2 tsp. soy sauce
1 tsp. salt
1/2 tsp. liquid Barbecue Smoke®
1/2 tsp. cayenne pepper
1/4 tsp. black pepper
1 Lb. top sirloin steak OR 1 Lb. boned and skinned chicken breasts
2 Tbls. water
1 tsp. soy sauce
1/2 tsp. lime juice
1 dash salt
1 dash black pepper
1 Tbls. olive oil
1 lrg. Spanish onion - sliced thin
1/2 green pepper - sliced thin
1/2 red pepper - seeded, sliced thin
1/2 yellow pepper - seeded, sliced thin

-Combine the lime juice, oil, garlic, soy sauce, salt, liquid smoke, peppers, and either the sirloin OR the chicken in a Tupperware® container, cover, and refrigerate at least 2 hours or overnight.
-Discard leftover marinade.
-Grill meat over medium flame 4-5 minutes on each side.
-Cut meat into thin strips. Set aside and keep warm.
-Combine the 2 Tbls. water, soy sauce, lime juice, salt, and pepper. Set aside.
-Cook onion and peppers in oil until brown. Remove from heat.
-Pour reserved mixture over onions and peppers.
-Combine meat, onions, and peppers.

Note: Serve on flour tortillas with cheese, guacamole, sour cream, tomatoes, and lettuce.

Olive Garden's® 5-Cheese Lasagna

Serves : 12
Prep. Time : 1:45

1/4 cup butter or margarine
1/4 cup flour
2 cups milk - lowfat okay
1/4 cup sun-dried tomatoes, oil-packed - minced
1 Tbls. minced garlic
3 1/2 cups ricotta cheese - lowfat okay
3 eggs
1 cup grated parmesan cheese - lowfat okay
1/2 cup grated romano cheese - lowfat okay
1/2 tsp. salt
1 tsp. black pepper
12 lasagna noodles - prepared and cooled
4 cups shredded mozzarella cheese - lowfat okay
1 cup fontina cheese
marinara/spaghetti sauce - to top
grated parmesan cheese - to top

-Melt butter over medium heat in heavy, 1 quart saucepan.
-Add flour and stir until well-blended; cook until frothy.
-Add milk, stirring constantly with wire whisk as mixture comes to a simmer.
-Cook and stir until thickened (3-4 minutes).
-Chill while mixing other ingredients.
-Drain and mince tomatoes and place in 3 quart mixing bowl.
-Add garlic, ricotta, eggs, parmesan, romano, salt, and pepper to bowl.
-Add 1 1/2 cups of cooled cream sauce and mix until well blended.
-Refrigerate, reserving 1/2 cup for later use.
-Place 3 lasagna noodles in a 9" X 13" X 2" lightly oiled baking dish, overlapping slightly.
-Spread 1 1/2 cups cheese filling over noodles; sprinkle with one cup mozzarella and 1/4 cup fontina cheese.
-Repeat pasta and cheese layering three more times; top with remaining three lasagna noodles.
-Spread 1/2 cup of reserved cream sauce over top and cover lightly with foil.
-Preheat oven to 350 degrees and bake for 1 hour.
-Remove from oven and keep warm at least 30 minutes before serving.
-Serve topped with hot marinara and Parmesan cheese.

Cracker Barrel's® Hash Brown Casserole

Serves : 8
Prep. Time : 0:55

2 Lbs. frozen, country-style hash browns
salt - to taste
pepper - to taste
2 cups sour cream - lowfat okay
1 can cream of chicken soup - lowfat okay
1/2 cup butter or margarine
1/2 cup chopped onion
2 cups grated cheddar cheese - lowfat okay

-Place potatoes in a greased 9" X 13" pan.
-Season with salt and pepper.
-In a bowl, combine minced onions, sour cream, and cream of chicken soup.
-Pour soup mixture over potatoes; sprinkle with cheddar cheese and melted butter.
-Bake in 350 degree oven for 45 minutes, or until all is completely warm, and the cheese begins to melt.

Margarita Presidente like Chili's®

Serves : 1

crushed ice
1 oz. Sauza
® Commemoritiva Tequila
1/2 oz. Cointreau
®
1/2 oz. Presidente
® Brandy
1/2 oz. Rose's
® lime juice
1/3 cup sweet & sour mix
course salt

-Fill a shaker with crushed ice.
-Pour all ingredients into shaker.
-Cover and shake.
-Strain into salt-rimmed martini glasses.

NOTES : 1 oz. = 1 shot.

Onion Ring Loaf
like Tony Roma's® & Damon's®

Serves : 4
Prep. Time : 1:15

5 white onions - sliced
1 cup milk
3 eggs - beaten
salt - to taste
2 cups pancake mix
oil - for deep-frying
parsley sprigs - for garnish

-Separate onions into rings.
-Combine milk, eggs and salt to taste in mixing bowl.
-Soak onion rings in mixture 30 minutes.
-Place pancake mix in shallow bowl.
-Heat oil for frying in skillet to 375 degrees.
-Remove onion rings from milk mixture, dip in pancake mix, and place in hot oil.
-Fry rings until golden brown.
-Drain fried onion rings on paper towels.
-Pack fried onion rings solidly, but loosely, without pressing, into 8" X 4" inch loaf pan.
-Bake in 400 degree oven for 10-15 minutes.
-Turn onto serving plate.
-Garnish with parsley.

Black Eyed Pea Baked Squash


Notes:
This is a great take on this side dish.

Ingredients:
5 lbs. medium size Yellow Squash
2 eggs - beaten
1 C. Bread Crumbs plus additional for topping
1 stick Butter
1/4 C. Sugar
2 Tbsp. Onion - chopped
1 dash Black Pepper


Preparation:
Cut tips off squash and cut each squash into 3 or 4 pieces. Drop squash into a large saucepan with enough boiling water to cover. Return to boil, reduce heat and cook until tender. Drain in colander and mash.

Combine with beaten eggs, 1-cup breadcrumbs, butter, sugar, salt, onion, and pepper. Turn into a 3-quart casserole that has been lightly sprayed with a nonstick spray. Cover with light layer of breadcrumbs. Bake at 350 degrees for 20 to 25 minutes or until lightly browned.

Reese peanut butter cups:
 
2 dark chocholate bars( melted)
1 cup peanut butter( smooth)
cupcake papers
muffin tin
 
Melt chocolate. take half choc mixture and mix in sauce pan with the peanut butter.put the plain choc mixture aside.
spoon choc into cups and refigerate one hour. when hardened add peanut butter choc mixture and top with choc..regerate till hardened.
yummy.....just about like the real thing.

Keen5, I'm making this recipe this weekend. Sounds great - not too healthy but that's why it sounds so good. It's going to a steak fry since we're all sick of baked potatoes at this point! I'm happy I joined this little group!
