~Italian Chicken Skillet~
- 8 bone-in skinless checken breast halves
- 3/4 cup sliced celery
- 3/4 cup chopped green bell pepper
- 1/4 cup chopped onion
- 1 (4oz) can drained mushrooms
- 2 cans stewed tomatoes
- 1 tsp dried parsley flakes
- 1 tsp vinegar
- 1/2 tsp garlic powder
- 1/2 tsp basil
- 1/2 tsp oregano
- 1/4 tsp pepper
In a large skillet sprayed with Pam, saute chicken over medium until browned. Remove and keep warm. In same skillet, saute celery, peppers, onions and mushrooms until tender. Return chicken to pan. Combine remaining ingredients; pour over chicken and vegetables. Cover and simmer for 30 minutes. Uncover; simmer an additional 10 minutes.
