Antiposta is the start of a great meal. Surprisingly it seems to increase the appetite so we us a blend of fresh vegetables as well as different meats and condiments. Its great to make and hold in the fridge for snacking as the flavors only get more intense as it marinates.
2 stalks celery sliced abt 1/2 on the bias
1 bag tiny baby carrots
1 lg green pepper cut into chunks
1 lg red pepper cut into chunks
1 red onion cut into bite size chunks
1 10 oz can artichoke hearts
1/4 small can black olives
8 oz salami julienned
8 oz ham julienned
4 oz pepperoini slices
4 oz buffalo mozz lg julienne
4 oz smoked mozz chesse cubed
1/2 tsp minced garlic
1 pk Hidden valley ranch Herb and Spice salad dressing --follow directions on package but use white balsamic vinegar and decrease the amount of water to 1/2, and use olive oil.
Let this marinate for at least an hour before serving, but it will hold in the fridge up to 4 days.
I dont suggest using squash or other soft vegetables in this as it will not hold as well unless you are planning to use the salad the same day. Other ham can range from procuitto to smoked, depending on your personal preference.
