This recipe is delicious - a little tricky to handle so be careful with the cakes. They do fall apart easily before cooked, but they are well worth making and eating. Enjoy!
Crab Cakes
1 can crab (drained & rinsed)
Add: onion, red pepper and celery (all diced fine)
Sprinkle in bread crumbs, and 1 beaten egg just to bind together
Add: mayo, tarragon, parsley, paprika, dry mustard
(I use a little of each)
Form into small cakes and dust with breadcrumbs and a little cornmeal for extra crunch and fry in a little butter & oil till browned.
Serve with yogurt herb dressing.
Yogurt Herb Dressing
1/2 cup plain yogurt
1/2 cup mayo
1/4 cup milk
1/2 tsp sugar
1/4 tsp oregano, basil
Fresh dill
Blend well. Chill. Serve on top of crabcakes with fresh dill to garnish. Enjoy.
