First, this is the FIRST Thanksgiving that I have been away from family.  We have always lived away from them, but been able to come home.  This year we can't.  So we have invited a friend of my hubby's and his girlfriend and a former soldier of my hubby's to Thanksgiving dinner.  Kind of a coming together of people who can't be home for the holiday.  So there won't be a ton of us, but we want to include things that we will miss this year from being so far from home.
 
Here's the plan as of right now at my house.  Carrie (hubby's best friends girlfriend) and I are going to cook together!  This should be fun!
 
Turkey: I've never cooked a turkey before.  I'm gonna follow the directions on the PC Turkey Basics cards and hope for the best.
 
Ham: It will be small.  For the best friend!
 
Sweet Potatoes:  This was a hard recipe to find.  I'm just gonna cook them according to a recipe for carmalized sweet potatoes and then mash and put marshmallows on top and brown in the oven.
 
Regular Mashed Potatoes: for those who don't like sweet potatoes
 
Green Bean Casserole:  This is always the very first dish to be gone!
 
Corn:  Just the frozen kind with butter.
 
Broccoli & Cheese Casserole:  Don't know exactly what this one is for sure...this is Carrie's recipe she'll miss from home.
 
Apple Pie, Chocolate Pie (cheating on this one and bought a frozen one), and some kind of pumpkin log roll.
 
Homemade Apple Sauce:  IF I can find the cinnamon imperials!
 
Cranberry sauce:  From real cranberries
 
Stuffing: From a box with dried cranberries and chopped celery added.
 
Oh and a cheese ball with crackers for those munchies!
 
We know it is a lot of food for so few people, but this is our first Thanksgiving away from home and we don't want to feel so far away.  Besides, lots of food means lots of yummy leftovers (and less cooking for me later)!

I just realized I didn't actually answer the question of what is derby pie! It has a filling similar to pecan pie but with chocolate in it. Oh and the crust is so flaky! You can find it at:  http://www.atasteofkentucky.com

We have the basics
Turkey, stuffing, mashed potatoes, green bean casserole, creamed onions, squash, cranberry sauce, but our main focus is on PIE!!!  I make 2 and my mom, 2 aunts and sister in law each bring 2 more each!  Here's what's on the menu this year:
Chocolate Cream
Coconut Cream
Apple
Lemon Meringue
Pumpkin
Pecan
Key Lime
Raspberry-Rhubarb
Blueberry
Cheesecake

At our house we'll have 4 adults and 2 children; the menu includes: Smoked Turkey (a la Sam's Club LOL), Cornbread Dressing, Sweet Potato Soufle, Mashed potatioes and gravy, Blueberry Gelatin Salad, and Fruit Salad.  For dessert Pumpkin Pie Cake and German Chocolate Cake.  I REALLY wanted to try roasting a turkey from scratch in my new roaster - but smoked turkey is our 'tradition' and hubby wanted it.  Soooo - I'll just have to try that roasted turkey in a couple of weeks!!

so......... how did everyone's menu turn out? 
 
I scratched the pumpkin cake and the green onion cheese ball....  I didn't get the thermometer in the right spot on the turn so it wasn't quite done but it was pretty close. 
 
It was a great day with very little stress!  Hope everyone's turned out well.

Everything was fantastic...except my pumpkin rolls !!!  The filling didn't turn out right (it was more opaque than white like cream cheese) and the roll itself stuck to the towel horribly and cracked in several places (I did sprinkle powdered sugar on the towel first).  Don't know if I'll try that again !!
 
But everything else was great !!!!

I'm really struggling this year.  Normally we have some family come and visit, but nobody's coming up this year.  As far as I know (unless I find some stray friends to invite), it's just the 5 of us - 2 adults and 3 kids (13,11,7).  I can't imagine not making all the food I usually make, but at the same time, it's a lot of food for just us.  Hence my struggle.  The normal menu is:
 
1 turkey roasted in the oven (usually a big one, around 20 lbs)
1 turkey cooked in our smoker (smaller, around 13 lbs)
mashed potatoes
mac-n-cheese
green bean cassarole
stuffing
corn
cranberry sauce (for DH, he's the only one of us who likes it)
rolls
apple pie (for DH and 2 of the kids)
pumpkin pie (for me and the other kid)
 
The real kicker is that I have an impossibly small oven, so a lot of stuff either has to be done ahead of time or else while the turkey is "resting" before carving.  It makes holiday meals very hectic.

I'm in the same boat as you Teresa. I usually have several people over, or go to someone's house. I love to cook now and asked two other couples to come over, but they are travelling to their families and not staying here.

I usually make
Turkey
Corn pudding
green bean casserole
baked apples (these are easy, either frozen on from a can)
dressing
sweet potato casserole

I'll probably still do all this, we'll just end up with lots of leftovers (only feeding me, hubby, 4 yo daughter and 11 mo son).

How about just getting a Breast of Turkey (they aren't too big) instead of a regular bird that you'd have a lot of left overs with?  I've been buying them lately (butterball) and my family loves them.  Hubby said he's loving mini Thanksgiving all year long!

To those who don't have a bunch of folks coming for Thanksgiving...
 
Try a turkey breast.. either one with the bone or without.
 
It looks like just me, my sister and husband (ok, dog, too) this year so I want to try a boned in one perched on top of the fluted pan.  Sort of like how you would do a chicken on it.  I have tried the chicken and it comes out great.  My idea is to make stuffing...
 
Bread.. cheapest stuff at market on  Wed, cut into cubes Wed night and allowed to dry overnight.
Mix with chopped celery and onions.
Thyme, sage, parsley, salt & pepper and my secret ingredient (don't tell anyone.. tarragon)
Warmed chicken broth and melted butter.  Mush together and place that around the bottom of the pan.  Pearch the turkey breast on top.  Rub the breast with olive oil and then smear some herbs on the outside.  Tent the whole thing and in the oven it goes.  I think somewhere along the way the foil will come off, and I will have to keep the stuffing under cover. But it's an experiment, so I will wing it as I go!!
 
Mashed potatoes... with tons of butter and cheese.
Baked sweet potatoes... twice baked style... baked, scoop out center, mash with butter & brown sugar and repack into shell and broil with some brown sugar on top.
Some sort of veg.. my sister loves the green bean casserole, which I can't stand, but we will probably go with that.  I will keep some of the green beans plain for me.
Cranberry sauce.. fresh berries, 1 whole orange, a bit of sugar... all chopped together.
 
Dessert...
This is where it get good!!!
Homenade sweet potato ice cream.  I know the pumpkin pie thing is tradition, and there might be one of those around if my sister makes it, but I hate it, so I won't be making it.  The ice cream is way better with a bit of warmed marshmellow sauce over top.
 
Oh yes, and wine (of course!!).
 
And finally... the worst part of the day : clean up!!

A new family favorite that I found on www.allrecipes.com:
 
Great Pumpkin Dessert (I call it Pumpkin Dump Pie)
 

INGREDIENTS

  • 1 (15 ounce) can pumpkin puree
  • 1 (12 fluid ounce) can evaporated milk
  • 3 eggs
  • 1 cup white sugar
  • 4 teaspoons pumpkin pie spice
  • 1 (18.25 ounce) package yellow cake mix
  • 1 cup butter, melted
  • 1 1/2 cups chopped walnuts

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  2. In a large bowl, combine pumpkin, milk, eggs, sugar and spice. Mix well, and pour into a 9x13 inch pan.
  3. Sprinkle dry cake mix over the top, then drizzle with melted butter. Top with walnuts.
  4. Bake at 350 degrees F (175 degrees C) for 1 hour or until a knife inserted near the center comes out clean.

Here are a couple I came across while out of curiosity I put in a search for SWEET POTATO ICE CREAM also SWEET POTATO ICE CREAM2.  Have to say in all my years I've NEVER heard of this B4 this thread! LOL
