How do you make them?  I bought the long stem, large strawberries. What kind of chocolate do you use (melted chocolate chips)?  Also, can they be made today and served tomorrow night?  TIA

I dont see why you couldnt make them ahead of time. I'd use the choc chips you get from the cake store (the flat round chips, not like the cookie kind of chips) since they are better for melting down smoothly. If you want to use regular choc chips add a drop of veg oil to the melted choc when you are stirring them, it makes them a bit smoother.

Yes you can make them ahead of time...a day is good, but longer than that the leaves start to look funky, but the strawberry still tastes fine.  I use the meltaways too...plus melt a little bit of white (or another light color) and drizzle...looks GREAT!

they also have stuff in little cups that you microwave in the cake decorating/chip area in the grocery store.   I've used this before and it works great.

I always use the baking chocolate.  It sets up really well.  There is a recipe on CC for Tuxedo Strawberries....I think it is on the downloads page(?).  It uses white chocolate and regular chocolate and they are adorable.

You can use any of the baking bars or chips but add a small amount of shortening.  Watch melting the white it scorches VERY easily. Make sure the strawberries are DRY and not cold.  This is not something you want to do more than a day ahead of time.  I don't store in the Fridge because the strawberries will sweat and kinds of shrink away from the coating.
